(Unila): Banana stems can be converted to any sorts of food products, such as chips. This contributes to entrepreneurship beneficial to economic value. The activities were put in place in a given village in Mesuji Regency by a group of Unila students carrying out field works.
The Unila students were Raka Rifaldi Racsyah, Rizky J. Sianturi, Salsabilla Noviya Romadhona, Ivo Sitorus, Dzahra Zhalika Lus Nizar, Anggi Aprilia, Rahmania Dhea Nova, and accompanied by Field Supervisor (DPL) Dr. R.A. Diana Widyastuti, S.P., M.Si.
A banana stem is believed to have advantages of detoxifying the digestive system, reducing weight, controlling cholesterol and blood pressure, curing stomach acid, and stabilizing blood sugar.
It also contains the nutrients tannin, saponin and flavonoids, and is rich in fiber and vitamins such as vitamins A, B and C, as well as nitrogen and potassium. The process of making chips starts from taking out the inner part of the banana stem which has previously borne fruit, then slicing it into sheets.
The next process is then soaking it in a solution of whiting lime for one hour to a maximum of one day, to remove the sap and bitter taste from the banana stem, then processing it again with kitchen spices and seasonings.
